Skillet-Cooked Top Round Steak





Serves 4
Top round steak makes for a quick and flavorful meal, any night of the week.
Ingredients:
| 2 pounds top round steak, 1-inch-thick or less |
| Dry mustard |
| Salt |
| Black pepper |
| Butter, softened |
Directions:
- Two hours before cooking, allow steak to come to room temperature. Trim steak of any connective tissue on surface of the steak. If necessary, and using a meat mallet, pound steak to an even thickness.
- Heat a large cast iron skillet over medium-high heat.
- Rub dry mustard onto each side of steak. Sprinkle steak with salt and freshly ground black pepper. Spread softened butter onto each side of steak. Place steak in skillet; cook 3 minutes per side.
- Remove skillet from heat, tent skillet with foil, and allow steak to sit for several minutes in skillet. Test for desired degree of doneness by using a small knife to check the color of the steak.
